Are you asking this question in regards to the default scss values?
Yes for example if I want to redefine the row-width value in the _grid.scss, I'll do for example:
$row-width: 100% !default;
But as soon as I'll update foundation the value will return to
$row-width: rem-calc(1000) !default;
I am new to this so not sure if this is the 'right way'.
I create an app.sccs file that imports the foundation scss. Then I have my own _settings.scss that sets the things i want and import that before the foundation files. The foundation source is left unaltered and can be updated as needed.
$row-width: 95% !default;

In scss, _setting.scss you uncomment the variable you want to change and make changes. The defaults are the commented out variables.
