Ink - Why Use Columns over Block Grid?

I've recently started using Ink to create responsive email templates for my company. I've just finished my first template and don't really understand what the advantage of using their column structure over their block grid structure. The block grid seems easier to implement and seems to work a heck of a lot better when shrunken down to mobile.

TLDR: Whats the advantage of using columns over the block grid? The column structure seems messy when compared to the block grid.
