I was able to solve this using:

foundation update

2/3 days later, now I no longer get this error.

In foundation 5 you create a new project with:

foundation new PROJECT_NAME

then all the files are created for you.

you can put you css styles in scss/app.scss
and run the command
compass watch
to have the sass compiled.

As I've understood you can override some default behaviours editing
bower_components/foundation/scss/foundation/_settings.scss
(uncomment and change values there)

for the rest i'm tryng to learn.... :-)

Your solution seems interesting, but how are you dealing withe the rest of the files, for example js files are you copying them?

the tweet you referenced was mine :-) but I'm still waiting for a definitive response: is te git repo indispensable to run udates using "foundation update" ?
